Quinoa is a wonderful grain that is full of protein and nutrients. For people who don’t eat meat, its a great way to add extra protein to their diets. This recipe for garden quinoa can act as a side dish or a main dish. Its super versatile, and you can even add your own veggies and seasonings to make this recipe your own.
1/2 cup Quinoa
1 cup Water
1/2 tablespoon Olive Oil
1/2 cup Yellow Onion, diced
3 cloves Garlic, minced
1/2 cup Asparagus, chopped
1/2 cup Yellow Bell Peppers, diced
1/2 cup Tomatoes, diced
1/4 cup Red Bell Peppers, diced
1/4 cup Fresh Parsley, chopped
1 teaspoon Dried Oregano
1/4 teaspoon Salt
1/4 teaspoon Pepper
- Rinse the uncooked quinoa and add it to a small saucepan. Cover the quinoa with 1 cup of water and bring the water to a boil. Cover and simmer the quinoa for 20 minutes.
- Next, heat the olive oil over medium heat in a large skillet. Add the yellow onion and cook for 3-5 minutes. Next, add the minced garlic and cook for 1 minute.
- Add the asparagus, yellow pepper and tomatoes to the skillet and cook on low for 6-8 minutes.
- Once the quinoa is finished cooking, add it to the skillet and stir in the parsley, dried oregano, salt and pepper. Heat the quinoa and veggies all of the way through, then serve.
