Very simple and quick to prepare, this is a zesty pairing of zucchini and squash that is able to stand alone as a satisfying meal or is also excellent when used to top whole wheat pasta.

2 medium summer squash, diced
2 medium zucchini, diced
½ can (10 ounce) diced green chilies and tomatoes
½ medium onion, chopped
Pinch of salt
Pinch of garlic
- In a large skillet, mix together summer squash, zucchini, diced green chilies and tomatoes, onion, salt, and garlic.
- Place the mixture over medium-high heat and allow it to come to a boil, stirring it occasionally.
- Reduce heat and allow the mixture to simmer for about 15 minutes or until the vegetables are tender yet still crisp.
